Butternut Squash and Carrot Soup

So I just got a Vitamix 750 today and LOVE IT!   It makes everything you could ever want; soup, sauces, smoothies, juices, ice cream and so much more.  The beauty of it is that it makes professional quality recipes!  The soup I made was creamy, thick and amazing without using one bit of cream.  So this is how I did it.

Ingredients:

  • 2 cups of vegetable broth (or chicken)
  • 1 whole butternut squash roasted
  • 2 carrots roasted
  • 1 onion roasted
  • 1/4 teaspoon of ground nutmeg (leave out if you don’t want it spicy)
  • 1/2 teaspoon of salt
  • 1/8 teaspoon of pepper
  • Sour cream as a garnish

Steps:
1. Preheat  your oven using the broiler for 10 minutes
2. Prepare your vegetables: squash, carrots and onion

2. Place veggies in a roasting pan and cook for 15 minutes, then turn veggies over and cook for another 15 minutes.

3. Cut off any chard pieces and place broth, squash, onion, carrots, nutmeg, salt and pepper into the Vitamix container in that order and secure lid.  (If you don’t have a Vitamix, you can place in a dutch oven or soup pot and blend with a hand blender)

4. Select Hot Soup program on your Vitamix and let it do its thing.  It should mix and blend for 5 minutes and 4o seconds, then turn off.

5. Serve and enjoy immediately!  Dab sour cream if you desire. I chose to do so after taking pictures because the nutmeg gave the soup a strong kick.
