Trader Joe’s Easy Pizza

So I kind of feel like I’m cheating on this one but I just had to share.  In the past, I’ve made my own pizza dough.  It’s simple, quick and always delicious.  However, this recipe is even quicker for those who want a great homemade meal without much effort.  The key….Trader Joe’s Pizza Dough! Personally, my favorite is the Garlic Herb Dough.  It just has the best flavor out of the three they offer (Plain, Whole Wheat and Garlic Herb).   Then you can make it as simple or as complex as you want.  I basically just check my fridge and see whats in there.  No planning needed!  That’s why I love this recipe so much.

Ingredients:

  • Trader Joe’s Pizza Dough
  • Tomato Paste
  • Italian Herb Seasoning
  • Veggies of your choice
  • Olive Oil
  • Shredded low fat Mozzarella Cheese
  • Shredded Sharp Cheese

Steps:
1.  Preheat oven 350° F.
2.  Remove pizza dough from fridge.  Grab a cookie sheet or pizza stone and generously sprinkle flour or corn meal onto the sheet.  Let dough reset for 20 minutes.
3.  Now shape your dough into a pizza.  Use a lot of flour so its easy to work.  When you’re happy with the results, you can start building your pizza.
4.  Sprinkle olive oil all over the top of the pizza.  Using a basting brush, spread the oil evenly over the entire surface.
5.  Add tomato paste and spread as thin or thick as you desire.
6.  Sprinkle a generous amount of Italian Herb Seasoning over the paste.
7.  Sprinkle a thin layer of cheese (mixed).
8.  Add half of your veggies and or meat.
9.  Sprinkle another layer of cheese
10. Add your remaining veggies and or meat.
11.  Place your pizza on the lower rack and cook for 15 minutes.  Remove from oven if everything looks cooked and bubbly.  If not, cook for another 5 minutes until everything is cooked.  Let it rest for 5 minutes and enjoy!!!


Japanese Eggplant and Heirloom Tomato Pizza
Used:

  • 3 large Heirloom Tomatoes
  • 2 medium Japanese Eggplants
  • 2 cups of low fat Mozzarella Cheese
  • 1 cup of Sharp Cheese



Zucchini, Heirloom Tomato and Salami Pizza
Used:

  • 2 whole Zucchini’s
  • 4 small green/red Heirloom Tomatoes
  • 2 cups  of low fat Mozzarella Cheese
  • 1 cup of Sharp Cheese

 

As you can see, I really enjoy making this dish.  It’s a great way to use veggies in your fridge that you just don’t know what do with.  It also makes you eat more veggies than normally…especially if you’re like me and you load them onto the pizza.
