Roasting Beets

Beets are extremely nutritious and delicious.  This is one of my favorite things to prepare at home.   I put them in salads, other recipes or even just eat them plain.  It’s simple and extremely easy.

Why beets? They protect against coronary artery disease, stroke, lower cholesterol, low in calories, natural antioxidant, significant amounts of vitamin-C and are thought to have anti-aging effects.  (They even have many more positive effects…too long to list)

What You Need:

  • Beets
  • Olive Oil
  • Salt & Pepper
  • Oven
  • Aluminium Foil

Prepare your beets by cutting off the tops and bottom.  Preheat the oven to 350 degrees

Scrub the beets well to get off any excess dirt in hot water.

Drizzle olive oil all over the beets on a large piece of aluminium foil.  Sprinkle a generous amount of salt and pepper to coat the beets.

Make a pouch with the foil to enclose the beets.  I double my foil since it may leak.

Cook beets for 40 minutes or until tender.  Let them cool enough to peel.  Recycle foil and place beets on plate to peel.

Use gloves to peel skin off.  Beet juice stain, so don’t wear your favorite outfit in case you get some beet juice on yourself.

Enjoy your beets now or later.  That’s it!
